Pizza pairs well with a big hearty wine and the natural choice is a Zinfandel. But tonight the richness of cabernet sauvignon was the right ticket. Homemade Gourmet Pizza
We love getting together with friends, sharing food, conversation, and of course good red wine wine. Last week three families had a pizza night, not in a pizza place, but in our Jen’s home. Our Baccarossa Chef Jen was whipping out gourmet pizzas that you would never find at pizza parlors. Yes, we had a few classics with pepperoni but the standouts were pizzas like béchamel sauce spiked with red pepper flakes, brussels sprouts (yes really, brussels sprouts), red onion, and cheese. My favorite was pesto with cut grape tomatoes, red onion, pine nuts, prosciutto, cheese and topped with fresh arugula sprinkled after it came out of the oven.
The secret to a great pizza is starting with the right dough and a really hot oven. Jen’s friend Zoe Francois wrote a book on it called “Artisan Pizza and Flatbread in Five Minutes Day.” We highly recommend this book if you are interested in making fantastic homemade pizza in a short amount of time. We all now keep a tub of dough in the fridge, ready for a family pizza night, which we have at least once a week. It’s really fast, inexpensive, and everyone loves it.
